Enjoy!<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em><strong>Ingredients:<\/strong><\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">olive oil cooking spray, or 2 tbsp olive oil<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">2 onions, diced<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">3 garlic cloves sliced<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1 teaspoon caraway seeds<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1 teaspoon salt<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">2 lbs (950g) stewing beef, trimmed of fat, cubed<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">2 tablespoons sweet Hungarian paprika<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\u00bd teaspoon cayenne pepper (optional \u2013 use if you like a bit of spice)<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">2 c (500ml) beef stock (low sodium broth)<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">14 ounces (400g) chopped tomatoes<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">3 carrots, roughly chopped<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">3 potatoes, peeled and cubed (optional)<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">2 red bell peppers, sliced<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Salt and pepper to season<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Sour cream to serve (optional)<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em><strong>Directions:<\/strong><\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Use paper towels to pat dry the beef.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Sprinkle salt and pepper to taste.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Prepare the oven and preheat to 325 degrees F or 160 degrees C.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Place a casserole dish on the stove and turn the heat to medium.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add olive oil and allow it to become hot.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add the onions and saute until translucent.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Turn the heat to medium-high, then add the garlic, caraway seeds, and salt. Saute for a few minutes until aromatic.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add the beef and cook each side until brown.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Remove the dish from the heat, then add paprika. Stir until well mixed.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Put it back on the stove, then add the carrots, tomatoes, and beef stock. Allow the mixture to simmer.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cover the dish and cook for about 1 hour.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Remove the cover, then add the potatoes. Stir until just mixed.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cover it again and cook for one more hour.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add the peppers and cook for another 30 minutes.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add more seasonings if needed.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Serve with crusty bread and sour cream. Cook for 7 hours on a low setting.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Remove the cover, then add the sliced pepper.
