They are often served as a dessert or snack and can be sprinkled with powdered sugar or served with a sauce or fruit coulis.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ingredients<br>2 eggs<br>1 pinch of salt<br>120g caster sugar<br>250g ricotta cheese from the fridge<br>grated zest of an orange or lemon<br>half a packet of baking powder<br>cinnamon<br>180g of soft wheat flour 00<br>frying oil<br>Preparation<br>Mix the eggs with the salt and the sugar.<br>Then add the ricotta, the citrus peel (optional), the yeast and the cinnamon.<br>Finally add the flour and mix well until you get a homogeneous paste without lumps.<br>Shape the pancakes with two spoons and fry them in hot oil.<br>Dip them in the sugar and serve.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Ricotta doughnuts are sweet and chewy treats made with ricotta dough, sugar, flour, eggs and flavourings.
