In fact, the <strong>American Heart Association<\/strong> points out that diet explains about 40% of total cardiovascular risk.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Below, we explain <strong>which are the four parts of chicken that should be avoided<\/strong>, especially when mature.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">1. The Skin of the Chicken<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Crunchy and tasty, yes&#8230; but also <strong>the part with the highest concentration of saturated fat<\/strong> of the entire bird.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>It raises LDL (&#8220;bad&#8221;) cholesterol, favoring the formation of plaques in the arteries.<\/li>\n\n\n\n<li>It acts as a <strong>reservoir for toxins<\/strong>: pesticides, antibiotics and other fat-soluble substances accumulate there.<\/li>\n\n\n\n<li>Frying or cooking at high temperatures generates <strong>advanced glycation end products (EFAs),<\/strong> compounds that damage the inner lining of blood vessels.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Research cited by the <strong>National Institutes of Health<\/strong> shows that a serving of skin-on chicken can triple the saturated fat of skinless chicken. In addition, the <strong>Mayo Clinic<\/strong> associates the regular consumption of AGEs with accelerated vascular aging.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">2. Chicken liver<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Although in many cultures it is considered nutritious, <strong>the liver fulfills a clear function: to filter toxins<\/strong>.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>It contains <strong>extremely high levels of cholesterol<\/strong> (a single serving can exceed the recommended daily limit).<\/li>\n\n\n\n<li>It can accumulate <strong>heavy metals<\/strong> such as cadmium or lead, especially in industrially raised birds.<\/li>\n\n\n\n<li>These substances contribute to oxidative stress and chronic inflammation, two key factors in cardiovascular disease.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">For people who are older or have high cholesterol, regular liver consumption can be particularly harmful.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">3. The Chicken&#8217;s Neck<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">It usually goes unnoticed, but it is one of the worst options:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>It is mainly composed of <strong>skin, fat, cartilage and bones<\/strong>, with very little real protein intake.<\/li>\n\n\n\n<li>It concentrates saturated fats and toxins similar to those of the skin.<\/li>\n\n\n\n<li>It is rich in <strong>purines<\/strong>, which raise uric acid and are associated with increased cardiovascular risk, according to the <strong>European Society of Cardiology<\/strong>.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">In addition, it is usually cooked fried or very browned, which increases the formation of inflammatory compounds.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">4. The wingtips<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Probably the most underrated and, at the same time, most problematic part.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>The wings are usually the <strong>site of application of vaccines and antibiotics<\/strong>, so the tips can retain more pharmacological residues.<\/li>\n\n\n\n<li>They have a <strong>terrible protein-to-fat ratio<\/strong>: a lot of cartilage and fat, very little nutritional value.<\/li>\n\n\n\n<li>According to USDA nutritional analysis, up <strong>to 60 percent of your calories come from fat<\/strong>, much of it saturated.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">In addition to the fact that they are usually consumed fried and with salty sauces, they represent a dangerous combination for blood pressure and cholesterol.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Which parts of the chicken should you choose?<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">If you want to continue consuming chicken in a healthy way:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Opt for <strong>skinless breast or thighs<\/strong>.<\/li>\n\n\n\n<li>Prioritize cooking methods such as <strong>oven, griddle, boiling or gentle grilling<\/strong>.<\/li>\n\n\n\n<li>Avoid frying and excessively high temperatures.<\/li>\n\n\n\n<li>Whenever possible, choose <strong>organic or antibiotic-free<\/strong> chicken, as it contains less chemical residue.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Tips and recommendations<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Always remove the skin before cooking or eating.<\/li>\n\n\n\n<li>Use herbs and spices (garlic, rosemary, thyme, lemon, paprika) to add flavor without extra fat.<\/li>\n\n\n\n<li>If you prepare broth, use bones and lean meat, <strong>removing any visible fat<\/strong> that rises to the surface.<\/li>\n\n\n\n<li>Maintain good hygiene practices: keep chicken refrigerated, cook it thoroughly, and avoid cross-contamination.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Chicken is not the enemy of your heart. <strong>The problem is in choosing the wrong parts<\/strong>. Avoiding your skin, liver, neck, and wingtips \u2014 and opting for well-groomed, lean cuts \u2014 can make a huge difference in the health of your arteries, especially after age 50.
