Enjoy!<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em><strong>Ingredients:<\/strong><\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1 1\/2 c (300 g) dry red lentils<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1 large (200 g) carrot finely diced (*see recipe notes)<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1 small bell pepper<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1 large onion chopped<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">4 cloves of garlic minced<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1 heaped tbsp fresh ginger minced<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1\/2 tablespoon vegetable oil<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">3 c (720 ml) vegetable broth or water<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1 c (240 ml) canned coconut milk<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1 1\/2 teaspoons ground cumin<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1 tablespoon curry powder<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1\/2 tablespoon sweetener of choice<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1 teaspoon ground turmeric<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1 teaspoon paprika<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Sea salt and black pepper to taste<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1\/3 teaspoon red pepper flakes optional<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em><strong>Directions:<\/strong><\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Wash and rinse the lentils with water.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Slice the garlic, onion, bell pepper, carrot, and ginger.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Place a pot on the stove and turn the heat to medium heat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add oil and allow it to become hot.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add the sliced ginger, garlic, bell pepper, and carrot. Saute for a few minutes until soft and aromatic.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add the sweetener, all spices, 3 cups vegetable broth, and lentils. Stir until well mixed, then allow the mixture to boil.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Reduce the heat and simmer for another 10 minutes.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add the coconut milk and stir until well blended. Simmer for about 5 minutes or until the texture becomes thick.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Sprinkle salt and pepper. Stir until well mixed. Garnish with herbs.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Serve immediately with basmati rice or naan.
