Homemade Piedmontese Salad

By liliaturcin5

This salad is quite famous but do you make it homemade? Personally, I don’t like the ready-made version at all, so I was a little angry with this salad, and then I tasted homemade… and I loved it!

  • 200g diced ham
  • Salt pepper
  • 150g mayonnaise
  • 10 large pickled pickles
  • 600g “Charlotte” firm-fleshed potatoes
  • 3 boiled eggs
  • 400g firm tomatoes

  1. Cook the potatoes with the skin on for 20 minutes in salted boiling water. Leave them to cool then peel them and cut them into large cubes.
  2. Wash the tomatoes, deseed them and cut them into small cubes.
  3. Arrange in a salad bowl, add the gherkins cut into slices, the diced ham, and the coarsely chopped hard-boiled eggs.
  4. Mix with the potatoes, and gently add the mayonnaise.
  5. Place in the refrigerator 1 hour before consuming.
