The basic recipe for sweet and savory pancakes

By liliaturcin5

Pancakes are a sweet or savory dish, it all depends on the type of ingredients you want to stuff them with. You can prepare them with eggs, flour, milk, butter and a pinch of salt, and you can cook them in minutes. Starting from the basic preparation that we will explain to you in this recipe, we can then stuff them as we wish.

TYPE OF FLOUR 00: 500gr
MILK: 1 liter
BUTTER: 60gr
SEA SALT: a pinch

To prepare the pancake mix, put the eggs in a bowl, beat them then add the milk and a pinch of salt.

Sift the flour and put it in the mixture, add the melted and cooled butter and mix everything, removing lumps until you get a homogeneous mixture. Leave to rest in the refrigerator for at least 30 minutes.

To cook the pancakes, use a special pan of about 20 cm, put it on the fire with a little butter and pour the mixture into it, creating a thin and even round layer.

Wait a minute and if the crepe layer in contact with the pan turns golden/brown, then one side is cooked, then proceed to cooking the other side (9).

Once cooked, pancakes can be stuffed either hot or cold. There are those who fold them in half with the stuffing inside, those who fold them in four parts, and finally there are those who prefer to roll them up.

When I cook them but I don’t use them all at once, I leave them in the fridge (cooked crepes can be kept for a maximum of two days, while raw dough can be kept for a maximum of ten hours) and when I want to use them as a starter, cutting the pancakes into several long and thin strips as if they were already cooked tagliatelle, then I season them with tomato sauce or with cream and mushrooms. Pancakes are perfect as a single dish as well as a starter, starter, second course or dessert. It all depends on how you will use it.

Sweet pancakes
Gourmet peoples of the world, unite! The crepe seems to have been created to be associated with sweet flavors. Which of you has never tried a pancake with hazelnut cream? Besides the sweet taste of the hazelnut cream, many other ingredients can be used to stuff a delicious pancake: bananas, fresh fruit, chocolate, jam, cream, flans and ice cream.

Savory pancakes
Savory pancakes are just as inviting as the sweet sisters. We can stuff them with mushrooms, bacon, cooked ham, raw ham, sausages, fresh and cured cheeses, eggs, tomatoes, mozzarella and with many other ingredients according to personal taste or according to what what we have in the fridge and what we do. t want to throw.

Pancakes without eggs or milk, and with different flours. Vegan and vegetarian pancakes.
Chickpea flour, buckwheat flour, wholemeal flour: these are just some of the flours you can use to replace type 00 flour. The taste will be different, but good as usual. For the vegan recipe – or just because you want a lower calorie, lighter pancake – you can eliminate the eggs and replace the milk with water and the butter with oil.
