Light chickpea meatballs, a tasty and delicious second course with only 45 calories!

Chickpea meatballs are a really very good and tasty second course, which will appeal not only to those who follow a vegetarian diet but, incredibly, also to all those who just can’t do without meat. In fact, meatballs (regardless of how they are made) are a dish that everyone always likes, because in its simplicity this dish manages to be a superlative delight.

Then, this delicious variant made with chickpeas is perfect for any occasion, because it can be prepared to accompany yogurt sauce, or it can become the right recipe for finger food . Of which, among other things, these delicious meatballs can be considered the expression.

The recipe for chickpea balls, a tasty and low-calorie second course

Ingredients

  • 500ml of water
  • 450 gr canned chickpeas
  • 60 gr of breadcrumbs + to taste
  • 50 g of grated cheese
  • 1 egg
  • Just enough chopped parsley
  • pepper and salt to taste

Preparation

  1. To start, pour the water into the mixing bowl , then add the chickpeas and blend everything to obtain a creamy, homogeneous and soft consistency.
  2. Now add the egg, salt, pepper and parsley, then mix the ingredients well.
  3. At this point ( to give the right flavor and firmness ) add the grated cheese and breadcrumbs, then mix again to properly incorporate them into the other ingredients.
  4. Now work your dough with your hands, so as to obtain the balls from it to form your meatballs, which must weigh 25-30 g each.
  5. Then transfer them to a baking tray lined with parchment paper, then drizzle with a drizzle of extra virgin olive oil.
  6. Finally, cook in the preheated oven for 25 minutes at a temperature of 180°C.
  7. When your meatballs are crispy you can take them out of the oven, then let them cool and serve.
