No-Bake Beer Cheesecake Beer cheesecake is a very unusual cold beer dessert.

A no-bake cheesecake with beer contained in the cream. To decorate and complete my beer cheesecake, I wanted to add salted caramel. Have you ever thought about making a beer cheesecake?

How to make beer cheesecake!

Ingredients for 8 people:

For the base

  • 100g butter
  • 200 g de biscuits type Digestive

For the cream

  • 250 ml liquid full cream
  • 90g icing sugar
  • 100ml light beer
  • 3 sheets of gelatin
  • 400 g of mascarpone

the decoration

  • salted caramel

Preparation :

  1. Crush Digestive Biscuits in a Food Processor
  2. Melt the butter and add it to the cookies and mix well with a spoon
  3. Line the bottom of a springform pan 24 cm in diameter
    (previously covered with cling film) with this preparation
    Pack well and place the mold in the refrigerator
  4. Soak gelatin sheets in beer in a bowl
  5. Then, transfer the gelatin sheets with the beer to a small saucepan and melt the gelatin over very low heat.
  6. Leave to cool
    Put the mascarpone in a bowl with the icing sugar and mix
    Add the beer with the melted gelatin and stir
  7. Whip the cream until stiff peaks form.
  8. Gently fold it into the previous preparation using a spatula.
  9. Pour the cream obtained on the biscuit base
  10. Place the beer cheesecake in the fridge for at least 3 hours to firm up completely
  11. When the beer cheesecake is ready, unmold it, remove the cling film and place it on a serving platter, then decorate it with salted caramel and serve
