A delicious white cheese cake

  • 200 g Flour biscuits
  • 600 g Drained white cheese
  • 3 Egg yolk
  • 4 Egg white
  • 100 g Powdered sugar
  • 2 tbsp crème fraîche
  • 125 g Butter
  • 1 untreated lemon


  1. Reduce the biscuits into crumbs (you can do this by hand or with a small robot), knead the crumbs with the butter and pack this preparation into the bottom of a round mold (preferably easy to release) and place in a hot oven for 10 minutes (thermostat between 7 and 8). Meanwhile, prepare the garnish.
  2. Mix the fromage blanc with the cream, sugar, egg yolks, lemon zest and the juice of half the lemon to obtain a smooth paste.
  3. Beat the egg whites and gently incorporate them into the mixture.
  4. Pour the mixture onto the base and cook in a moderate oven for 30 minutes.
  5. Wait until the cake is cold, put it in the refrigerator and unmold it when serving.
