  • 1 onion, quartered

  • 1 teaspoon turmeric powder (or 1 inch fresh turmeric, grated)
  • 1/2 teaspoon black pepper

  • Fresh parsley or cilantro, chopped (for garnish and added nutrients)

Instructions:

  1. Combine Ingredients: Place water, carrots, celery, onion, garlic, ginger, turmeric, and black pepper in a large pot. If using chicken, add it now.
  2. Simmer: Bring to a boil, then reduce heat and simmer for 30-45 minutes (or longer if using chicken, until it’s cooked through). If using lentils, add them in the last 15 minutes of cooking.
  3. Strain (Optional): If you prefer a clear broth, strain the mixture, discarding the solids. If you like the texture, you can skip this step.
  4. Add Lemon and Garnish: Stir in the lemon juice. Garnish with fresh parsley or cilantro.
  5. Serve: Drink the broth warm.
