  • 1 kg of Apples
  • Juice of 2 lemons
  • Lemon zest
  • 1 cinnamon stick or cinnamon powder
  • 200 ml of water

Preparation

  1. Preparation of the apples: Wash the apples well and peel them. Remove the core and cut the apples into small pieces. This step is crucial to ensure an even texture in the jam.
  2. Initial cooking: Place the chopped apples in a large saucepan along with the juice of the lemons, cinnamon stick and water. Lemon juice not only adds flavor but also acts as a natural preservative.
  3. Simmer: Simmer, stirring occasionally, for about 40-50 minutes or until the apples are cooked through and starting to fall apart. Slow cooking allows the flavors to fully integrate.
  4. Remove the cinnamon: Once the apples are ready, remove the cinnamon stick.
  5. Process the mixture: Use a hand blender or food processor to blend the mixture to a smooth, homogeneous texture. If you prefer a jam with pieces of fruit, you can leave some parts unprocessed.
  6. Final cooking: Put the mixture back in the saucepan and cook over medium heat for another 10-15 minutes, stirring constantly to prevent sticking. This will help thicken the jam.
  7. Packaging: While the jam is still hot, pour it into sterilized glass jars. Close the jars tightly and turn them upside down for a few minutes to create a vacuum and ensure better preservation.

  • Apple varieties: You can experiment with different types of apples to vary the flavor and texture of your jam. Green apples add a more acidic touch, while red apples tend to be sweeter.
