- Initial cooking: Place the chopped apples in a large saucepan along with the juice of the lemons, cinnamon stick and water. Lemon juice not only adds flavor but also acts as a natural preservative.
- Simmer: Simmer, stirring occasionally, for about 40-50 minutes or until the apples are cooked through and starting to fall apart. Slow cooking allows the flavors to fully integrate.
- Remove the cinnamon: Once the apples are ready, remove the cinnamon stick.
- Process the mixture: Use a hand blender or food processor to blend the mixture to a smooth, homogeneous texture. If you prefer a jam with pieces of fruit, you can leave some parts unprocessed.
- Final cooking: Put the mixture back in the saucepan and cook over medium heat for another 10-15 minutes, stirring constantly to prevent sticking. This will help thicken the jam.
- Packaging: While the jam is still hot, pour it into sterilized glass jars. Close the jars tightly and turn them upside down for a few minutes to create a vacuum and ensure better preservation.
