  • 2 teaspoons cinnamon powder
  • 1/2 teaspoon nutmeg
  • 1/2 cup water

Preparation

  1. Prepare the apples: Wash the apples carefully under running water. Peel them and remove the seeds. Cut them into cubes of similar size to ensure even cooking.
  2. Cooking: Place the apple cubes in a large pot along with the water and lemon juice. Turn the heat on to medium heat and bring everything to a boil.
  3. Add the spices: Once the apples have started to boil, add the cinnamon and nutmeg. Mix well and reduce heat. Simmer for about 30-40 minutes, stirring occasionally, until the apples are soft and turn into a kind of compote.
  4. Mash the apples: When the apples are soft enough that they can be mash easily with a fork, turn off the heat and use a potato masher or fork to mash the apples to a homogeneous consistency.
  5. Reduce: Return the pot to a simmer and continue to cook, stirring frequently, until the jam thickens to the desired consistency. This should take about another 15-20 minutes.
  6. Cool and store: Once the desired consistency is reached, remove from the heat and let cool for a few minutes. Transfer the still hot jam into sterile glass jars and seal them tightly. Let cool completely to room temperature before storing in the refrigerator.
