How to prepare tasty chocolate-covered almonds

There are recipes that win you over for their simplicity and for the irresistible scent they give off already during preparation. Homemade chocolate-covered almonds fall perfectly into this category: few ingredients, quick times and a result that satisfies both the palate and the desire to prepare something genuine.
These almonds are reminiscent of artisanal preparations: the roasting enhances the natural taste of dried fruit, while the chocolate enriched with spices creates an intense and enveloping aromatic balance. It is not a “light” dessert, but a small cuddle to be enjoyed with awareness, made with simple and natural ingredients.
Ingredients
- 200 g whole almonds with peel
- 150 g of dark chocolate (or milk chocolate, of your choice)
- 2 tablespoons of powdered sugar
- 1 teaspoon vanilla extract
- 1 level teaspoon of ground cinnamon
- 1 pinch of ginger powder
- 1 pinch of nutmeg
- 1 pinch of cloves powder
The spices can be adjusted according to your taste, increasing or reducing the quantities to obtain a more delicate or stronger aroma.
Method
- Toast the almonds: place the almonds on a baking sheet lined with parchment paper, sprinkle them with icing sugar and mix them lightly. Bake at 170 ° C for about 10-12 minutes, until golden and fragrant.
- Melt the chocolate: coarsely chop the chocolate and melt it in a bain-marie or over very low heat. Combine the vanilla extract and spices, stirring carefully.
- Coat the almonds: add the still warm almonds to the melted chocolate and mix until evenly covered.
- Cool: Spread the almonds on parchment paper or in small ramekins and let them cool to room temperature until the chocolate has solidified.
The result is a crunchy preparation on the inside and velvety on the outside, which can be kept for several days if placed in a tightly closed glass container and kept away from heat and humidity.
