How to make homemade Ciabatta
To prepare homemade Ciabatta, we will not need many ingredients. They are the classic ones that we use to make any type of bread, however the secret lies in their procedure. We will need:

For the ferment
-100 ml of warm water
-25 g of fresh pressed yeast (8 g of dry yeast).
-2 tsp of sugar
-2 tbsp. plain flour
For the dough -500 gr plain flour -300 ml warm water
Procedure
- In a bowl we are going to place the 100ml of warm water, along with the sugar and the tablespoons of plain flour. Add the crumbled yeast and mix until completely disintegrated.
- Cover the container with plastic wrap and let it rest for about 15 minutes.
- Once it has fermented, place the rest of the water and the previously sifted flour. Mix well with the help of a spatula.
- Now we will finish kneading, but we will do it with a mixer for about 10 minutes. This is the secret to a good Ciabatta, the smoothie. This will allow it to generate air bubbles, generating its characteristic texture.
- Then cover the dough with plastic wrap and let it rest for about 15 minutes.
- After this time, we will wet our hands so that the dough does not stick to us and with gentle and enveloping movements, we will begin to fold it so as not to remove the air that has been generated in it, we do not have to knead it. Let it rest for another 15 minutes. We will repeat this step, about 4 times.
- As we let it rest, we will notice that the dough becomes softer and more elastic. Sprinkle the table or counter with a little flour and pour the dough, remember not to knead it.
- Cut the dough into the number of buns you want and sprinkle them with more flour. Always doing it very carefully, without crushing or pressing. Place them on a sheet containing parchment paper and let them rest for about 20 minutes.
- Take to a preheated oven at about 220°C, the first 10 minutes we will cook it at this temperature. Then we will lower the temperature by 180°C and let it bake for about 15 more minutes.
- Remove from the oven and let cool before tasting.
