Preparation, step by step
- To start, preheat the oven to 180°C.
- In a large bowl, place the cherry tomatoes.
- Add 1 tablespoon of sugar and spread well over the tomatoes.
- Add 1.1/2 teaspoon salt and spread again.
- Stir in 1/2 teaspoon of black pepper or something similar, depending on your preference.
- Add oregano to taste.
- Pour 1 cup of olive oil over the tomatoes and mix well.
- Place basil leaves in the mixture. If you prefer, you can also use sprigs of thyme or rosemary.
- Add the 6 large garlic cloves and mix until everything is smooth and well combined.
- If you decide to use large tomatoes, cut them in half and use Italian-style tomatoes with more flesh and fewer seeds.
- Transfer the mixture to a baking sheet and distribute it evenly.
