Ingredients

  • 4 Eggs
  • 4 large tomatoes (remove the inside to create a space to place the ingredients)
  • 50-70 g grated mozzarella cheese
  • A bunch of green onion (chopped)
  • 2 tbsp Mayonnaise
  • Salt to taste
  • Ground black pepper to taste
  • 1 tbsp olive oil

Preparation

  1. Prepare the tomatoes: Cut off the top of each tomato and carefully empty the inside, leaving enough space to place the egg and the rest of the ingredients.
  2. Mix the ingredients: In a bowl, mix the eggs, chopped green onion, grated mozzarella cheese, mayonnaise, salt and pepper to taste.
  3. Stuff the tomatoes: Spoon egg mixture into each tomato until filled.
  4. Baking: Place the stuffed tomatoes on a baking sheet previously greased with olive oil. Bake at 200° C, for 25 minutes or until the eggs are cooked and the tomatoes look golden brown.
  5. Presentation: Serve the stuffed tomatoes with a side of leafy greens or toasted bread, to taste.

  • Variety of cheeses: You can substitute mozzarella for other types of cheese such as cheddar, feta, or gouda to give it a different touch of flavor.
