Ingredients
- 4-5 kilos of ripe tomatoes
- 8 Onions (finely chopped)
- 3 tsp salt (adjust to taste)
- 3 tbsp sugar
- 3 g fresh ginger (grated)
- 1 tsp of sweet paprika powder
- 5 bay leaves
- 1/4 liter of vinegar (it can be apple cider or white vinegar)
- Juice of 1 lemon
- 1 celery stalk, finely chopped
- 2 tsp pepper (adjust to taste)
Preparation
- Preparation of the tomatoes: Wash the tomatoes well and remove the peduncle. Make a cross-shaped cut in the base of each tomato. Blanch the tomatoes in boiling water for 1-2 minutes, until the skins begin to separate. Then, remove them from the water and peel them. Cut the tomatoes into cubes, removing the seeds if you prefer.
- Initial cooking: In a large pot, add the chopped tomatoes along with the onions and celery. Cook over medium heat for 15-20 minutes, stirring occasionally, until the tomatoes begin to fall apart and the onions are tender.
- Add seasonings: Add grated ginger, paprika powder, bay leaves, salt, and pepper to tomato mixture. Stir well so that the flavors are integrated.
- Stir in the liquid ingredients: Pour the vinegar and lemon juice into the pot. Also add the sugar, which will help balance the acidity of the vinegar and tomatoes. Bring the mixture to a gentle boil, stirring occasionally, for about 45 minutes to 1 hour, or until the sauce thickens to your liking.
